Fish with Vegetables

This serves two hungry people:

  • 1 tablespoon of butter
  • 1 smallish onion, chopped
  • 1 clove of garlic, minced
  • 1 stalk of celery, chopped
  • 1 medium tomato, chopped
  • 1 small zucchini, chopped
  • 1/2 red pepper, chopped
  • 1/2 teaspoon basil
  • 1 pound cod, haddock or other firm white fish
  • 1/4 cup feta
  • juice of 1/2 lemon

Heat oven to 425 degrees.

Saute vegetables in butter for 5 minutes.

Place half the vegetables in a small baking dish, put fish over, then cover with the remaining vegetables. Bake in hot oven for15 minutes til fish tests almost done.

Pour off pan juices and reduce (boil down to a few tablespoons). Sprinkle feta over all, pour reduced sauce and lemon juice on top. Bake a few minutes til cheese is hot. Serve.
