This makes 2 or 3 servings, depending on who's coming for dinner:
Heat the oven to 350. Scrub potatoes. Cut each lengthwise into 8 wedges.Heat the butter and oil in a jelly roll pan. Add the potatoes, toss to coat, then sprinkle with salt, paprika, and pepper.Bake until tender and browned, occasionally turning, about 1/2 hour to 45 minutes. |
